BAKED PUMPKIN WITH POMEGRANATE AND DATES
MAMA TUTA’s brand chef Gia Khuchua came up with a spicy pumpkin mousse with date syrup and pomegranate seeds that we absolutely love for its delicate texture and easy preparation. A dessert-like appetizer.

Ingredients for the pumpkin mousse (300g - serves 3):
Pumpkin - 0.5kg
Olive oil - 35g
Tahini - 50g
Walnuts (shelled) - 50g
Fresh cilantro - 20g
Spices: cumin, cilantro - 1g each
Salt to taste

Garnish (serves 1)
Date syrup - 5g
Pomegranate seeds - 10g
Suma - 1g
Olive oil - 5g

Directions:

Chop the pumpkin, season with olive oil and salt, wrap in foil and bake for 40 minutes at 250 degrees. Allow to cool. Combine the pumpkin with tahini, walnuts, spices and salt until a smooth mousse-like texture, similar to hummus. Serve on a plate, drizzled with olive oil, topped with sumac and date syrup. Garnish with pomegranate seeds. Enjoy this bright and colorful starter!
